Caroline E. Jackson, 93 of Elkhorn, WI, formerly a 23 year resident of Middle Inlet, WI, died Tuesday, May 24, 2022 at her home in Elkhorn, WI. She was born February 13, 1929 in Milwaukee, WI, the daughter of the late George and Katie (Flager) Schmidt. On July 5th, 1947 in Milwaukee, WI, Caroline was united in marriage to Frank W. Jackson Jr. She worked as a meat wrapper for National Tea Grocery Store in Milwaukee for over 17 years, retiring in 1984. Frank and Caroline were members of Grace Lutheran Church in Middle Inlet, WI. Caroline loved to cook and was well known for her chili. She enjoyed sewing and crafting. Caroline loved being an homemaker and taking care of her family. She also enjoyed playing cards, bingo and adult coloring.

Caroline is survived by her two children: Suzanne (Daniel) Kolacke of Elkhorn, WI and Randall (Nancy Poetzl) Jackson of Menomonee Falls, WI, three grandchildren: Dan Kolacke, Joe (Risa) Kolacke and Nick Poetzl, five great-grandchildren: Allie (Chad) Simmerman, Abbie (Colton) Odling, Amy, Emma and Chloe Kolacke, three great-great-grandchildren: Carter, Cash and Carleigh Simmerman and her brother, John Schmidt of Cedarburg, WI. She was preceded in death by her beloved husband of 72 years, Frank, their son Danny Lee Jackson, four sisters: Mary, Katie, Eva and Rachel, and three brothers: Hank, Jake and George.
